Husband loves all the Summer smoothies and milkshakes that the coffee shops bring out at this time of year, but we’re looking for vegan (and, preferably, lower-calorie and healthier) alternatives this Summer. So I’m making a start with a home-made version of Costa’s Mint Choc Chip Frostino.
- 2 bananas
- 150ml plant milk (I used oat)
- A few mint leaves (or some mint flavoring, but fresh mint tastes really good. We grow some on the windowsill; it’s easy to keep, and you can make fresh mint tea from it too)
- Drop or two of vanilla (optional)
- Some vegan chocolate chips or chopped chocolate – something like 15-20g?
Chop the bananas into fairly fine slices and freeze (I leave them overnight). Once frozen, put them in a blender with the milk, mint leaves and vanilla (if using) and blend until you have a thick, smooth milkshake. You’ll need a reasonably good blender for this, the kind that can crush ice. Finally, stir in the chocolate chips.
This makes one large or two more sensibly-sized milkshakes. Naturally, it does have something of a banana flavor alongside the mint and the chocolate. We quite like it and it’s not overpowering, but you could always replace the bananas with a big scoop of vanilla ice-cream if you prefer.
